A simple, delicious chicken salad using store-bought rotisserie chicken. Creamy, tangy, and perfect for sandwiches, salads, or crackers.

Ingredients

  • 3 cup rotisserie chicken, shredded (about 1 small chicken)
  • 0.5 cup mayonnaise
  • 2 stalk celery, finely diced
  • 0.25 cup red onion, finely diced
  • 2 tbsp lemon juice (fresh)
  • 0.5 tsp Dijon mustard
  • 0.25 tsp salt (to taste)
  • 0.25 tsp black pepper (to taste)
  • 0.25 cup pecans or grapes (optional, for sweetness)
