A simple, delicious chicken salad using store-bought rotisserie chicken. Creamy, tangy, and perfect for sandwiches, salads, or crackers.
Ingredients
- 3 cup rotisserie chicken, shredded (about 1 small chicken)
- 0.5 cup mayonnaise
- 2 stalk celery, finely diced
- 0.25 cup red onion, finely diced
- 2 tbsp lemon juice (fresh)
- 0.5 tsp Dijon mustard
- 0.25 tsp salt (to taste)
- 0.25 tsp black pepper (to taste)
- 0.25 cup pecans or grapes (optional, for sweetness)

Shred or chop the rotisserie chicken into bite-sized pieces, discarding the skin if you prefer.
