Fluffy pancakes with warm pumpkin spice flavor. Perfect for a cozy fall breakfast.
Ingredients
- 1.5 cup all-purpose flour
- 2 tbsp brown sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 0.5 tsp ground ginger
- 0.25 tsp nutmeg
- 0.25 tsp salt
- 1 cup milk
- 0.5 cup pumpkin puree
- 1 whole egg
- 2 tbsp butter, melted
- 1 tsp vanilla extract
Instructions
- 1
In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, ginger, nutmeg, and salt.
- 2
In a separate bowl, combine the milk, pumpkin puree, egg, melted butter, and vanilla extract. Whisk until smooth.
- 3
Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix—a few lumps are fine.
- 4
Heat a griddle or non-stick pan over medium heat and lightly grease with butter or cooking spray.
- 5
Pour about ¼ cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- 6
Flip and cook for another 1-2 minutes until golden brown.
- 7
Serve warm with maple syrup, whipped cream, or a sprinkle of powdered sugar.
