Classic rice pilaf with toasted orzo, just like you find at Greek and Middle Eastern restaurants. Nutty, buttery, and a perfect side dish.
Ingredients
- 2 tbsp butter
- 0.25 cup orzo pasta
- 1 cup long-grain white rice
- 2 cup chicken or vegetable broth
- 0.5 tsp salt
Instructions
- 1
Melt the butter in a saucepan over medium heat.
- 2
Add the orzo and toast, stirring frequently, until golden brown, about 3–4 minutes. Watch it carefully—it goes from golden to burnt quickly.
- 3
Add the rice and toast for another 2 minutes until the rice is lightly fragrant and coated in butter.
- 4
Pour in the broth and salt. Bring to a boil.
- 5
Reduce heat to low, cover, and simmer for 18 minutes.
- 6
Remove from heat, keep covered, and let rest for 5 minutes.
- 7
Fluff with a fork before serving.
